Poblano Sopes - a traditional dish to share during this holiday season.
Ingredients:
• Poblano Peppers
• Sour cream
• Corn
• Parmesan cheese
• La Costeña Refried Beans
• 4 cups Maseca
• 1 ½ cup Water
• 1 tsp Salt
• 1 tsp Chicken broth powder
• 1 tbsp Oil
• Queso fresco
Directions:
- DOUGH- In a bowl mix maseca, water, salt, chicken broth powder and oil. - You can use a tortilla press or a rolling pin to press the dough balls into circles.
- Place the dough circles in a deep pan with hot oil and fry for one minute on each side or until golden brown.
- Place them on a plate with paper towels to absorb excess oil.
- Pinch the dough circles all around to form sope.
- In a pan with hot oil sauté poblano peppers.
- Add corn, sour cream and parmesan cheese.
- Bring to a boil.
- Add a layer of La Costeña Refried Pinto Beans on sopes.
- Add poblano peppers on top.
- Complement with queso fresco
