AUTHENTIC GYRO MEAT for Episode 81 Of All Things Greek! A series where I share recipes from my childhood and memories from summers spent growing up in Greece!
Today we are making iconic authentic Greek Gyro meat! You don’t need any special vertical skewer for this! Just a stand mixer, loaf pan and your oven! I love to marinate the beef in lots of garlic, oregano, cumin and olive oil! Try this in a gyro, a wrap, a sandwich or even your next salad so you can eat like a Greek all week long!

RECIPE (Serves 6-8 servings of Gyro Meat and 2-4 Pitas)
2 lbs lean ground beef
2 tsp garlic powder
3 tsp salt
1 tsp pepper
1 tbsp dried oregano
2 tsp cumin
4 tbsp olive oil
1 tbsp red wine vinegar
Gyros toppings:
2-4 pita pockets
Sliced gyro meat
¼ red onion chopped
1x tomato chopped
1/2 cup crumbled feta cheese
tzatziki (make our tzatziki)
1-2 cups 1-2 cups cooked french fries, optional
To make the gyro meat,
Preheat the oven to 350F.
Add all gyro meat ingredients to the bowl of a stand mixer. Using the paddle attachment, mix the meat mixture together on medium speed for about 5-7 minutes or until the mixture is smooth and tacky/pasty.
Place the meat into the loaf pan and use a spatula or flipper to gently press down on the meat, trying to get the air pockets out. Place the loaf pan onto a baking sheet to prevent any splatter in the oven.
Bake for 60 minutes, until gyro meat is no longer pink in the center. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven and allow to cool for 15 minutes. Remove any excess grease into your compost lined with a paper towel.
Thinly slice the meat and serve immediately or if desired, saute in a hot pan with a bit of oil until golden brown and crispy.
To make the Gyros,
If using, cook the fries according to package directions. When the fries are done cooking, toss with a drizzle of olive oil and big pinches of garlic powder, salt, pepper and dried oregano. Set aside.
Assemble the gyros - **If using a small pita snip the top and stuff / if using a larger pita cut in half and stuff**
Fill the pita pockets with tzatziki, fries, gyro meat, onions, tomatoes and feta cheese.
