I am still not over these viral sushi waffles! They’re so crispy and such a fun way to make sushi! 🍣 Let’s recreate it with a twist by making them iron enriched!

INGREDIENTS:

• 1 cup sushi rice (makes 6-8 sushi waffles)
• Lucky Iron Fish
• 4 cups water
• 1 tablespoon rice vinegar
• Sushi fillings: crab meat, mayonnaise, avocado, cucumber, and sesame seeds

DIRECTIONS:

1. Bring 4 cups of water to a boil, add 2 drops of rice vinegar, and boil the Lucky Iron Fish for 10 minutes. This will add 6-8mg of tasteless iron that is easy to absorb! Remove the Lucky Iron Fish and keep the iron enriched water for cooking the rice.

2. Wash your rice. In a rice cooker, combine the rinsed sushi rice with 1 ¼ cup of the iron-enriched water. Cook the rice according to the rice cooker instructions.

3. While the rice is cooking, prepare your sushi fillings. Dice the cucumber, avocado, crab meat. Add some spicy mayonnaise to the crab meat and mix together.

4. Once the rice is cooked, add 1 tbsp of rice vinegar and mix well. Let the rice cool to room temperature.

5. Preheat a waffle iron and lightly grease it with non-stick cooking spray or oil.

6. Take a portion of cooled sushi rice and press it onto the waffle iron, covering the surface evenly. Close the waffle iron and cook for about 6-7 minutes, or until the waffle is slightly golden brown and crispy. (Don’t over do it, otherwise the rice waffle will be very hard)

7. Top the sushi waffle with your desired sushi fillings. I went for a California roll style with crab meat, avocado, cucumber, and sesame seeds.

8. Repeat the process with the remaining rice and fillings & enjoy!
