Μικρά, κρατσανιστά, λαχταριστά ψωμένια κουλουράκια με σουσάμι και με αρώματα μοναδικά από το πορτοκάλι, την κανέλα και την μαστίχα Χίου. Παλιά και πολύ αγαπημένη συνταγή που την έφτιαχνε η γιαγιά μου, αλλά δυστυχώς δεν είχα προλάβει να μάθω ποτέ τα υλικά, ώσπου έπεσε στα χέρια μου το βιβλίο του Νίκου και της Μαρίας Ψιλάκη (Κρητική παραδοσιακή κουζίνα) όπου μέσα μεταξύ πολλών Κρητικών συνταγών βρήκα και αυτή...κουλουράκια ζεματιστά. Οι γεύσεις θυμίζουν πολύ τα κουλούρια που παίρναμε πολύ παλιά από τους φούρνους της Κρήτης, σουσαμένια κουλούρια που είχαν μια γλυκάδα και άρωμα από κανέλα. Ο τρόπος παρασκευής τους είναι παρόμοιος με τα bagels αλλά η γεύση τους είναι τελείως διαφορετική. Δοκιμάστε φίλοι μου αυτά τα κουλουράκια και είμαι σίγουρη ότι θα τα αγαπήσετε!

Small and delicious bread with sesame seeds and unique aromas with orange, cinnamon and mastic Chios. An old and very favorite recipe made by my grandmother, but unfortunately I never got to learn the materials until the book of Nikos and Maria Psilakis (Cretan traditional cuisine) fell in my hands. In this book I found myself among Cretan history and many traditional recipes. The flavors are reminiscent of the buns that were coming out of the old ovens of Crete, sesame buns that had a sweet aroma of cinnamon and mastic Chios. The way they are made is similar with the one of bagels, but their taste and flavor is completely different. Boil, bake and taste these bagel-cookies and I'm sure you will love them!

Chios mastic spice:
Mastic, referred to as mastika in Greek, is a spice that comes from the resin of the mastic tree. The Latin or scientific name for this plant is Pistacia lentiscus. The spice that we use in cooking is made from the resin of this tree. The sap is collected and dried and then either sold whole or ground before packaging.
In Greece, mastic comes from the island of Chios and is referred to as the “tears of Chios”. Although the tree can be found elsewhere in Greece, Chios has the highest concentration of it. It can be found in the markets in its dried form, either in whole “teardrop” shapes or already ground.(wikipedia)
Raki (Tsikoudia)of Crete:
is an alcoholic beverage, a fragrant, grape-based pomace brandy of Cretan origin that contains 40%–65% alcohol by volume.Tsikoudia is made by distilling of pomace, i.e. the pieces of grapes (sometimes including the stems and seeds) that were pressed for the winemaking process. The pomace is kept for about six weeks after the grapes have been pressed, in a tightly-sealed barrel, and then the fermented mush is distilled.(wikipedia)
