OMG, I ran across your recipe by accident. It's Christmas time 2018 and I was just telling my husband that I would love to make my mothers famous pineapple coconut cake for our family Christmas Get-together which will be at my house this year. I never new how my mother made this cake she passed away 2 years ago. When I saw your recipe I cried....I think my mother sent you to me. The only difference is she made a rectangle cake and it was my familes favorite. I'm going to surprise them and make it. So thank you and God bless you.

I make cakes all of the time, I haven't been able to in the past 2 years, because I've lost the ability to walk. I've always been disabled I thought I would be ok not walking I thought I was ready but you never are truly ready for these things so, I don't have a disabled kitchen setup, we now have the money to redo the house I can't wait for my kitchen, and I'm so excited, because I'm going to be able to bake. And this is the recipe I'm going to make, I'm so excited I'm sure it will be amazing, especially in my new kitchen thank you so much for this amazing recipe.

Carolyn I'm a professional Chef and Pastry Chef. I have watched many YouTube videos of people demonstrating their home cooking techniques. Most of what I have watched is comical and full of really bad cooking and awful food at the end. You however are a delight to watch and your cake demo was spot on. This cake was AMAZING. I will definitely be making it again, and especially for holidays. I poked some wholes in each of the layers before I put the filling on top so that it would seep into the cake a bit. It was wonderful :)
