Filipino-style Buffalo Chicken Wings
FOR FRIED WINGS
✔️500 grams Chicken wings
✔️2 cloves garlic (grated)
✔️1 teaspoon salt
✔️1/2 teaspoon pepper
✔️1/2 teaspoon paprika
✔️1/4 cup all-purpose flour
✔️2 tablespoon cold water
FOR THE SAUCE
✔️2 tablespoon butter
✔️2 tablespoon hot sauce
✔️2 tablespoon ketchup
✔️1 teaspoon soy sauce
✔️1 tablespoon sugar
✔️spring onions (garnish)
Directions
For the chicken wings:
Wash and prepare the chicken wings. Cut the joint to separate the wingette from the drumette.
Add the grated ginger, salt, black pepper, paprika powder (optional) and all purpose flour. Mix well. Add cold water and massage the chicken. Let this marinate for at least an hour.
Heat some oil in a pan using medium heat for deep frying.
Put some cornstarch in a plate. Dredge each wing with the cornstarch. Shake of excess.
Deep-fry the wings for 10 to 12 minutes until light brown. Flip to cook the other side. Transfer to a strainer to drain excess oil. Let them rest for 10 minutes.
To double fry, turn to heat to high and fry the wings again for 2 to 4 minutes until golden brown and crispy. Transfer to a strainer to drain excess oil. Set aside.
For the buffalo sauce:
Melt some butter in a pan and saute the garlic until fragrant and light brown.
Add the hot sauce, ketchup, soy sauce and sugar.
Let the sauce cook for a few minutes until thick.
Buffalo Chicken Wings:
Add the fried chicken wings to the pan. Toss gently until well-coated with the sauce.
Transfer the buffalo wings to a serving platter. Garnish with some chopped spring onions and top with roasted sesame seeds.
Serve it with your favorite ranch dip and some hot steaming rice. Enjoy!
