Summer is almost here! While the weather starts to warm up, make a refreshing “laarb gai”(Thai salad with chicken)!! This salad isn’t only light but and it really packs a punch! You’ve got tangy, savory and spicy in every bite 😜 The star of the show for me is the “mint”🍃 I love how the freshness brightens up the salad 😋

Ingredients:
- 2 chicken breast (I’ve tried with chicken thigh before and it didn’t yield the lean coarse texture I’m looking for)
- Roasted rice powder 1/2 tbsp (I put in extra bc I really like the nuttiness)
- Shallots 2-3
- Palm sugar 2 tsp
- Fish Sauce 1.5 tbsp
- Green onions 2 stalks
- 1 lime
- Cilantro - a bunch
- Mint - a bunch
- Chili flakes 1 tsp (adjust to your liking)
- Water 1 cup
- Romaine lettuce
- Cucumber

Instructions:
1. Ground your chicken breast
2. In a pan, lightly shallow poach the chicken in 1 cup of water. We’re not looking to brown the chicken and make sure to break the clumps apart.
3. Remove it and place it into a bowl (without the liquid)
4. Add in sliced shallots & green onions. Let the residual heat reduce the harshness of the shallots & onions.
5. Add in palm sugar, fish sauce and lime juice, roasted rice powder and chili flakes. Mix mix mix!
6. Lastly, add in your chopped cilantro and mint.
7. Mix gently to avoid bruising the fresh herbs. And taste test for adjustments.
8. Plate up with lettuce, cucumber and more herbs. You can also add cabbage and snack beans.
9. Scoop the laarb into the lettuce cups and enjoy!
