I’m surprised Ariana and Tom lasted as long as they did. He wanted to get married and have kids, and she didn’t. I think he was looking for a way out for a long time, but couldn’t be the one to make the break. He was waiting for Ariana to do it, but she never did. He was probably hoping that his absence from their relationship due to his involvement with his band and restaurants would have caused her to break it off with him (just like Katie and Schwartz), but she still stayed. So the only thing that would guarantee that Ariana would break up with Tom would be if he cheated. So that’s what he did.
