One of my favourite French dishes is steak tartare. I absolutely love the classic version with raw meat, but do you know what tastes even better? This recipe is fantastic! It's so simple and seems tasty and fresh. I really want to do that tartare, but I'm afraid of the raw fish and raw egg. I know that the raw egg needs to come from a certified farm with free-range chickens, but I really don't know where to buy good and clean raw fish and how to choose it. That would be a nice video to post, talking about how to know if a fish is clean and fresh, especially for fish cuts, not the whole fish, because we can't check the eye clarity and other parts of the body.

This looks delicious and reminds me very much of a dish that is very common in Hawaii and that is called poke. There are numerous varieties of poke, made from various types of fish, and with various (mostly Asian) flavor profiles. It is not uncommon to find about a dozen types of poke at the fish counter in local grocery stores in Hawaii. Poke now also is starting to become quite popular in the US, but I have not yet seen it in Europe.

Fantastic dish Bart! Wow do I ever wish I could buy fresh caught seafood in the middle of Canada :( I don't even think I could get my hands on Sushi Grade Tuna :(.

Those are some bigass capers. I've only seen them maybe 1/3 that size.
