Is it even possible? We’ll see. 🥯 Let me know if y’all have any recipes you swear by and I will try them.

First recipe we’re trying is one of the top results on Google if you search “New York style bagel recipe.” It’s from the Sophisticated Gourmet blog.

The verdict: These bagels were very delicious and simple to make, but the texture differed from NY bagels. Still much fresher and tastier than your run-of-the-mill store bought bagel though, and would highly recommend. 💕

The only thing I changed when making the recipe was to add a bit of brown sugar to the boiling liquid to help the bagels brown. (Barley malt syrup is traditionally used so I may order some for my next attempt.)

My notes: I will try again and attempt to work in a bit of extra bread flour in the kneading process. I may also increase my knead time. I think this will contribute a stronger chew and help to achieve a smoother surface. I’ll update you once I try!

You have to add soda (NOT BAKING POWDER) to boiling water and then boil them for 30sec on each side - then they will get that shiny surface and that characteristic chew.

Stella Parks’ recipe for SeriousEats makes the perfect chewy bagel texture, it’s a little more work than most recipes but it’s unbelievably good

Oooh this is the recipe ive been using to make my own bagels every week! I started about 2 months ago and I cant live without my daily bagel now. Ive never had a real new york bagel though but since I've only ever eaten store-bought, they taste perfect to me!
Did you try boiling them longer to see if it improves the chew?

Hot For Food's bagel recipe is usually my go to with an extra tablespoon or two of gluten flour, which gives mine a good chew. I actually just bought some barley malt syrup for another recipe.

Aren't you supposed to add sodium bicarb to the water? That's how I was taught, the soda makes the water more alkaline and helps gelatinize the surface by breaking down some of the starch. They also need a bunch of steam, like a french baguette.

New yorker, here i've been making peter reinhart's new york bagels for at least the last fifteen years period I always add vital weak gluten to bump up the protein content in bread flourthey're super chewy

Live in ny & have made with regular flour…& Trader Joe’s everything but bagel seasoning… Brian lagerstrom mades a decent bagel on his site ..haven’t tried his .., has more steps!

I think it’s worth buying vital wheat gluten to adjust your ratio manually instead of relying on the protein % of the different brands out there

Seriously, compared to a store bought bagel a 9? Who is that guy and he needs a demotion 😂😂😂. The bagels in any store I’ve shopped at are horrible. A homemade bagel would definitely surpass that! You need a replacement taster 😂😂😂
