Spiced Rice Recipe - Glen And Friends Cooking - Easy Masala Rice Recipe
This is an easy to make spiced or masala rice recipe that goes great with our Lamb Shank Nihari - Lamb Shank Curry recipe. This rice recipe is based on dishes we ate during our journey through India and along the Pakistan border. It's loosely based on a Pakistani spiced rice.

Ingredients:
250 mL (1 cup) Basmati rice
30 ml (2 Tbsp) ghee
1 onion, sliced thin
2 mL (½ tsp) salt
1 black cardamom pod
2 mL (½ tsp) cumin seeds
3 whole cloves
5 mL (1 tsp) whole black peppercorns
3 green cardamom pods
½ cinnamon stick
1 bay leaf
375 mL (1½ cups) hot water

Method:
In a heavy pot with a tight fitting lid, melt the ghee over medium heat and brown the onions with salt.
Allow the onions to brown to nice deep golden brown colour.
Add whole spices to pot and stir to combine.
(Alternately you could grind the cumin. clove, and pepper before adding.)
Add the rice, and hot water; cover and reduce heat to medium low.
Let simmer for 18-20 minutes, then turn off the heat and allow to stand another 15 minutes before serving.

I love lamb and rice. This rice looks so tasty! I have a suggestion: Afghani Rice. I have been told it takes a long process to make. One time I was given a bowl of this rice to share with my husband. I ate it twice. He never saw it.😏

I've always loved Indian food / Indian inspired food. I spent two weeks in India and now I'm obsessed!! It's so delicious. The layers of spices and flavors. Indian food is not just curry...there's so much more. Thanks Glen....this looks delicious!

You can prepare the rice and the flavouring on the stove and afterwards transfer everything to the rice cooker. Works perfectly for me.

After eying this rice dish for weeks, I finally got all the spices and made it. I was initially hoping that it had a bit more flavor than it seemed to have, but then realized that the rice needed to be stirred more to absorb all the flavors from all the spices. Very much looking forward to making the lamb soon, too!

Looks great. The onions and browning drive me nuts when I see folks say 2 mins. I have always laughed at that because I call their game on it at least in my head. It does take patience.
