Garlic scapes are a total perk of growing your own hardneck garlic!

In my zone 7A garden here in northern Virginia, my scapes show up in early June. It’s important to cut the scapes because this tells the plant to focus its energy on growing a big garlic bulb instead of wasting energy on producing a flower.

Use a sharp knife or garden shears to cut the scape at the base of the flower stalk, above the leaves.

Store fresh garlic scapes in the fridge, or chop and freeze for later use.

You can chop your scapes and use them just like garlic cloves. Here, I’m sautéing my scapes and adding to homemade sourdough pizza. 😋
