This may sound like a lot of rules for coffee, but they are not that difficult to follow, and I promise you’ll produce the best cup of coffee if you follow them.

For my business I need to buy roasted beans, about 10 pounds at a time. I store them in air tight steel ammo cans from Harbor Freight. They are air tight, and keep coffee nice and cool and fresh. Free tip!

The wonderful flavors in coffee are aromatic compounds and oils. There are also some carmelized sugars. The thing you smell that is so good would be the aromatic compounds coming out of the bean. You can slow that down by keeping the beans cool or cold. I freeze my beans and have done so for some 40 or fifty years. They don't freezer burn - that is bs since they are roasted to hundreds of degrees (roaster for some 16 17 years too) there is no moisture to speak of. If they are in an airtight bag, they don't absorb odors. I usually have more than a pound in the freezer. I roast a pound in the Behmor, air it out overnight, then put it in a freezer bag and into the freezer for a week to age. I can't find it but there is a video on youtube where a panel of coffee gurus taste fresh roasted coffee and 2 month old coffee that was frozen right after roasting and they could not tell any difference. Good to know and loved how you kept it mostly unedited. Humor is important when drinking coffee. I did feel left hanging though as you provided little to no reasoning behind any of your proposed methods. Otherwise great little video. I was under the impression to freeze my beans but you saved that from happening again.

You should have alteast put your reasons behind those tips. Like for instance, why do we want to store our coffee beans in a "dark place"?

Well... feelsbad that in some cities theres no coffee shops, only place u can buy phsically is at the markets. I buy via internet, on good places... but i cant but it every week, as it would get hella expensive ordering so frequently.

great video... why not in a dark "cool" place? my issue is sometimes temperature inside the house could be above 28c... is that ok for coffee even in an airtight container?

It is not storage if you are only using it right away. Tell me how to keep coffee stored for a year, or five.

I am wondering why you say not to refrigerate, given that every bag of coffee beans i have ever bought from the cheap to the £60 a small bag all say to store in an airtight container in the fridge after opening, keeping beans for just a week is incredibly wasteful and just evidence that you are not storing them right, when i buy beans i by 1Kg at a time and as soon as i get them I divide it up into vacuum sealed tubs and then stick them at the bottom of the fridge, 3 weeks on those beans are still as fresh as the day i put them in and taste just as good.

Buy it as close to the roast date as possible. Or better yet, roast your own beans. I almost always drink coffee within 2 weeks of its roast date. My favorite roaster won’t sell beans 2 weeks out or more from the roast date.

Rule #8: Drink what you feel taste good, not what a fancy pants critic says its good coffee. I like McDonald's, Folgers and Tim Horton's ground coffee when on sale. Whole bean its President's Choice Medium. Again when its on sale. Local roasters in my area make motor oil coffee like Star Fuck's. lol no thank you.
