Momofuku Milk Bar’s Cornflake Chocolate Chip Marshmallow Cookies

Saw these cookies online, and although I haven’t tried the original version, these vegan versions are out of this world! Crunchy, gooey, delicious cookies!

Ingredients
1 cup vegan butter, softened
1 1/4 cups sugar
2/3 cup brown sugar
1 vegan egg
1/2 tsp vanilla
2 cups flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
3 cups cornflake crunch, recipe below
1 cup mini chocolate chips
1 rounded cup mini marshmallows

Directions
Combine your butter and sugars into a large bowl
You can use a stand mixer or hand mixer
Once creamy add in your egg and vanilla
Mix until creamy
Add in flour, salt, baking powder and baking soda
Mix until dough forms
Fold in your chocolate chips and cornflake crunch
Gently fold in marshmallows
Form 1/4 cup balls and place onto prepared baking sheet, no need to space cookies out just yet
Repeat with remaining dough
Cover and refrigerate for at least and hour, preferably 2
Preheat oven to 350
Place cookies onto prepared baking sheet at least 4 inches apart as they will spread
Bake in preheated oven for 11-13 minutes
Remove and let cool*

*when you remove cookies if they spread out too much you can mold them back into shape using a ring mold

Cornflake crunch
4-5 cups of corn flakes
3-4 tbsps sugar
1/2 cup melted vegan butter

Directions
Preheat oven to 275
Mix together cornflakes and sugar in a medium bowl
Add in melted butter
Mix well
Spread out onto prepared baking sheet
Spread evenly into one layer
Bake in preheated oven for 15-20 minutes until toasted
Cool
Break into small pieces
