Here's a recipe for Turkish Delight using rose flavor:

Ingredients:

2 cups granulated sugar
2 cups water
1 tsp lemon juice
1 cup cornstarch
1/4 tsp cream of tartar
1 tsp rose water
3-4 drops red food coloring (optional)
Confectioners’ sugar, for dusting
Instructions:

In a large saucepan, mix together the granulated sugar, water, and lemon juice. Heat the mixture over medium heat until the sugar dissolves, stirring occasionally.

Once the sugar has dissolved, increase the heat to high and bring the mixture to a boil. Reduce the heat to medium-low and let the mixture simmer for about 25-30 minutes until it thickens and turns into a syrup.

In a separate bowl, mix together the cornstarch and cream of tartar.

Add the cornstarch mixture to the syrup and whisk until it's fully incorporated. Cook the mixture over medium heat, stirring constantly, for about 15-20 minutes until it thickens and starts to pull away from the sides of the pan.

Remove the pan from the heat and stir in the rose water and red food coloring (if using). Mix well until the coloring is evenly distributed.

Grease an 8x8 inch square baking pan with oil or cooking spray, and pour the mixture into the pan. Smooth the surface with a spatula and let it cool to room temperature.

Once the Turkish delight has cooled, dust the surface with confectioners’ sugar and cornstarch. Cut the Turkish delight into small squares or diamonds and dust each piece with more confectioners’ sugar.

Serve the Turkish delight as a sweet treat or gift to friends and family. Store the remaining pieces in an airtight container at room temperature for up to 2 weeks.

Note: You can adjust the amount of rose water and food coloring according to your taste and preference. Also, you can substitute rose water with other flavors such as orange blossom water or mint extract.
