So true about the Algerian cuisine, very few restaurants make it coz most of us prefer eating our "traditional" food at home so when we go out it's to try food that we don't usually prepare home. Our cuisine is very diverse depending on the region as you said it's the 10th biggest country of the world so there are many differences, cultures and traditions in Algeria 🇩🇿🇩🇿🇩🇿

Each season is diffrent in Algeria, next time maybe you can visit local person inside their home and enjoy the cuisine. Try also winter in algeria you can visit the north with snow and the south for the sahara.

The nice thing about Algeria is that the government doesn't support mass tourism, and the Algerian people don't see you as a walking dollar, unlike some neighboring countries.
