chocolate covered strawberry ice cream bars! they’re dairy free, paleo, and refined sugar free, and perfect for summer.
strawberry ice cream:
•1 (13.5oz) can full fat canned coconut milk
•1 cup raw cashews (or 1/2 cup cashew butter if you don’t have a high speed blender)
•1/3 cup pure maple syrup or raw honey
•1 tsp pure vanilla extract
•1/4 tsp pink Himalayan salt (use 1/8 tsp if using salted cashews/cashew butter)
•2 cups organic strawberries
chocolate shell:
•10oz dark or semi- sweet chocolate (i use dairy free and refined sugar free chocolate)
•2 tbsp coconut oil
instructions:
1. add all of the ice cream ingredients to a high speed blender and blend until smooth and creamy.
2. pour the ice cream mixture into 10-12 popsicle molds and place in the freezer until frozen solid (8+ hours).
3. once frozen, melt the chocolate and coconut oil together (either in the microwave or on the stovetop using the double boiler method) then remove from the heat.
4. remove the ice cream bars from the molds and dip them in the melted chocolate then place them on a tray lined with parchment paper (feel free to also just drizzle the bars with chocolate instead of dunk them in chocolate).
5. place the ice cream bars back in the freezer until the chocolate has hardened, then dig in and enjoy!
