SWEET POTATO MUFFINS

Ingredients:

1 medium sweet potato
1 large egg
3/4 cups oat flour
1/4 cups all purpose flour, sifted
1/2 tsp cinnamon
1 tsp vanilla extract
3 Tbsp butter, melted
Sugar ( I didn’t add sugar because the sweet potato was already sweet, you could add sugar and adjust to your liking)
3/4 cups milk

Bake at 400 F for 30 minutes
