The concern and problem with adding gears to the back wheel of a single speed bike, is that the frame of said bike likely will not have enough space to fit the cassette, then you either need to swap the frame, which is basically just getting a new bike, or you need to get a rear dropout stretcher and hope you don't wreck the frame. You don't have to worry about modifying the frame when adding gears to the pedals.

I've never done this but have had it on my mind for a while. Theoretically it should work just fine. I'd go with 2x for the sake of the chain not being cranked asuch. With some tinkering you should be able to center the freewheel somewhere in between the two gears on the crankset to allow the chain to be as straight as possible. Relatively straight to either gear. Perhaps spacers could be used to accomplish this.
Personally I see there being utility in this. I like to ride my single speed at a super simple gravel bike. Although on occasion I wish I had one more gear to soften the uphills for me. Thus this idea popped up in my head. I wouldn't write it off as pointless.
