Option 1: Should I create a separate copy of the design system for each new client and then add any necessary pages?

Option 2: Should I start a new file for each project and only copy the components I need from the design system?

So... I'm a stay at home mom that has been looking at web design as a side hustle, I'm only two weeks into this idea. I am so worried that AI will catch up to all the mid level jobs I might be good at after I finally learn everything. I have 25 years of fine arts training behind me, but if someone is happy with "Google make me a web site." I'm screwed, or just have to find something else.
