This Salmon & Crispy Potatoes dish is simple, healthy, and full of flavor! 🍋🥔 Pair perfectly crispy golden potatoes with baked salmon seasoned with olive oil, lemon, salt, and pepper. A nutritious meal that’s easy to prepare and great for any night of the week!
Ingredients:For the Crispy Potatoes
* Golden potatoes (cut in halves)
* Avocado oil
* Salt and pepper (to taste)
For the Salmon
* Salmon fillets
* Olive oil
* Lemon juice (freshly squeezed)
* Salt and pepper (to taste)
Instructions:
1. Prepare the Potatoes: Boil the halved potatoes until just tender, then drain and let cool completely. Toss with avocado oil, salt, and pepper, then lay cut side down on a parchment-lined baking sheet.
2. Bake the Potatoes: Roast at 425°F (220°C) for 45 minutes or until golden and crispy.
3. Prepare the Salmon: Place salmon fillets on a baking sheet. Drizzle with olive oil, lemon juice, and season with salt and pepper.
4. Bake the Salmon: Add the salmon to the oven during the last 15 minutes (the time will depend of the salmon size) of the potato baking time, and bake at 425°F until the salmon is flaky and cooked through. For a single fillet: 4-6min is good.
5. Serve: Plate the crispy potatoes with the baked salmon and enjoy a delicious, balanced meal!
