The Best Keto Bread Recipe - Simply Amazing!

2/3 Cups Ground Flax Seed
2/3 Cup Almond Flour
3/4 Cup Oat Fiber (not oat flour)
1 1/4 Cup Vital Wheat Gluten
2 Tbsp Monk Fruit
1/2 Tsp Xanthan Gum Powder
1 1/2 Tsp Salt
3 Eggs
3 Tbsp Avocado Oil
1 Cup Warm Water (110°)
2 Tsp Yeast (Rapid Rise Dry Yeast)
1/2 Tsp Sugar (Honey or Maple syrup would also work)   

Step 1
Mix warm water with yeast and sugar. Set aside to bloom (about 10 minutes) if it is not slightly bubbly on top your yeast has gone bad. Remember- not hot water which will kill the yeast and not cold water which will not activate it.
Step 2
Beat the eggs for 5 minutes
Then add oil
Step 3
(I do this step while the eggs are whipping)
Mix together all the dry ingredients
Step 4
Slowly add both yeast and dry ingredients into the egg mixture
Step 5
Kneed the dough for 8 minutes
(I did 6 minutes in my kitchen aid mixer and the last 2 minutes by hand)
Step 6
Shape and place in bread pan. Let rise for 2 hours (or until doubled in size)
Step 7
Place in oven 375° for 30 minutes
Let cool for 20 before cutting.

I rarely, if ever, have made comments on any videos, but I have to make an exception to this one. I've been doing keto for over 3 years and have tried sooo many bread recipes over the years. This one is IT, everyone. I was a bit worried after I kneaded the dough and it seems a bit tough. I've made lots of non-keto bread, so I'm familiar with the process. After the 2 hour rise, the dough looked really good. I baked it and it kept its shape. It looked like regular bread, and what's amazing is that it tastes great. I tastes like really healthy regular bread, so there's a slight heaviness to it, but without all the net carbs. This is going to be my go to bread.

I have been making this bread in my bread maker and I use just the dough cycle and it comes out great. I've not been able to make it for a while since I have an arthritic back and have been unable to get at my bread machine. I'm a bit better now and hope to do a new loaf soon, it'll be a great treat.

I made this recipe 2 days ago. This recipe is the only one that has produced a risen loaf on the first shot with the ingredients as described. I did make 2 substitutions, however. I used a small amount of honey in the water in place of sugar. I also used a stevia blend for the sweetener instead of monk fruit because I didn't have any on hand. Rise time was 1 hour in the pan covered with plastic wrap coated with oil to prevent sticking. The results of this bread are fantastic!

Best Keto Bread recipe? Definitely!
Have made many breads and this one tops them all by a country mile. Many, many thanks. Keto isn’t necessarily cheap, and throwing away ingredients on failed attempts is not something any of us enjoys. A big thumbs up from me and my wife and a big thank you, too.

After trying many recipes and none of them resulting in anything remotely like bread, I decided to try this recipe with hope and also skepticism. I am thrilled to report that I am super satisfied with the results! My loaf came out of the oven about 45 minutes ago and after cooling, i cut it up and tasted it. It looks, tastes and has the texture of a healthy bread. I am totally satisfied with this recipe. It is really filling too.
I need to know how to store it and has anyone tried to make bagels, rolls or pizza crust out of this recipe?

I just made this bread, I have been on keto for 2 years. I have tried a good many different breads, non tasted like real bread. I say bravo you have nailed it, keep up the fine recipes.😊

I just finished making this bread and it's a 10 stars (out of 5!). It did rise to double in size before putting it in the oven as you said. The taste is awesome and can't tell the difference between this bread and any other non keto bread! I cut a slice and put some butter and it and tasted amazing. Crystal, you should have your own cooking show on some national cooking TV channel. You are amazing! I can't wait to try your other recipes.

Hands down the best tasting Keto bread out there. The extra quantity of almond flour and flaxseed as opposed to others makes all the difference for me. I ate this with just butter without cringing. Much less vital gluten and oat fiber taste. No psyllium yoohoo, hate that stuff. Pretty sure beating 2 eggs helped a lot. Thanks so much. (Next time in bread machine to get better kneading)
One month and 5 loaves later, still fabulous. I’v managed to bring down the vital wheat and oat fibre a little, extra almond and flax. Even less weird taste. Everything in bread machine for kneading but baked in oven. Thank you so very much Crystal.

From what I understand, flax is a hormone disruptor. I am.going to try replacing it with psyllium since it lends chewiness to baked goods. The positive comments have convinced me to try it. Thank you.

I failed on another keto bread recipe twice, looking good before baking but deflated afterwards no matter how long I baked. Since I have experience on baking regular bread, I soonly found out the problems.

If you have similar problems with me, please give this recipe a try!
1.It calls for three eggs and lots of fibers which give this bread a really good supporting structure.
2. 375F & 30min is a great combo. Lowering the temp & baking longer is not a good idea cause the inside will not be fully cooked through while this keto toast really need to form a stable shape at a early stage.
3. If you happened to have a really small oven, bake it on the lowest rack with a pan/mat underneath, so the surface&bottom of the bread will not be burned. The bread will grow about half inch to one inch during baking, that's why you need to leave enough space.
4. If your bread touched the topmost part of your oven, instead of using a loaf pan, try a wider baking pan or simply make some smaller sandwich buns by dividing the dough into smaller parts and shape into round balls before proofing.
5. My proof time is 2hours @ 28°C. But for the 2nd one hour, I put a cup of boiled water besides the pan and then poured the water out and refilled it after 30min.

I’ve tried this recipe - it’s Deidre’s Keto Bread recipe. I made it in a bread machine and used honey for the yeast instead of sugar. It’s delicious.

Interesting approach. I will try this. Wheat gluten is a no go for many so I wonder if there is a substitute?
