Grilling of a Strip Loin steak over charcoal on a Weber Master Touch Kettle Grill.

Remove Steaks from grill 5 degrees lower than desired doneness. (Experts urge that steaks are best served Medium Rare / USDA recommends Medium).

Rest steaks for 5 minutes after removing from grill to allow meat to relax and reabsorb its juices. Cut steaks across the grain to maximize tenderness.

Rare 125 F (52 C)
Medium Rare 135 F (57 C)
Medium 145 F (63 C)
Medium Well 150 F (66 C)
Well Done 160 F (71 C)

Good stuff. Although I’d recommend using the vortex to concentrate the heat over the grate.

Before the Chiefs won the Super Bowl everyone in the world called these steaks KC Strips which is the correct name. After the Chiefs won the Super Bowl everyone started calling these steaks ny strip out of jealousy and envy.
