Recreating Cantarella's special recipe, the Homemade Panini, from Wuthering Waves!

INGREDIENTS

SEAFOOD & DRESSING
- 1/2 lb salmon, skin off
- 4 shrimp, no head or tail
- 1 lemon
- 2 garlic, crushed
- 1/2 shallot, minced
- 2 tsp dijon mustard
- 1 tsp olive oil
- salt
- black pepper
- sugar

SANDWICH
- 2 sourdough bread slices
- handful shredded mozzarella cheese
- 4 tomato slices
- leafy green lettuce
- 5 jalapeno slices
- olive oil

DIRECTIONS

- Cover salmon with salt and sugar on all sides. Place onto a rack and let it cure in the fridge for
1 hour.
- After 1 hour, dunk the salmon into a bowl of water to remove the salt and sugar cure then pat dry
- Slice salmon into thick chunks, about 1 inch thick
- Preheat a small pan on medium high heat and add oil
- Pan fry shrimp for 1-2 minutes per side until fully cooked, set aside
- In a bowl, combine the juice of a lemon, garlic, shallots, dijon mustard, olive oil, salt, and black pepper. After whisking, taste and add more salt if necessary
- Preheat a large pan on medium heat before starting the sandwich assembly
- To assemble the sandwich, brush olive oil onto one side of a sourdough slice
- Flip the slice and place mozzarella cheese, then tomato, then lettuce
- Mix the salmon and the shrimp in the dressing
- Place the salmon onto the sandwich and then the shrimp on top of the salmon
- Add jalapeno slices, more green lettuce and top off with the other sourdough bread slice
- Carefully place the sandwich down onto the preheated pan, olive oil brushed side down
- Toast the sandwich for 2 minutes with a weight on top. If you don't have a weight, pressing down
on a plate works too
- Brush olive oil on the top sourdough bread and then flip
- Toast for another 2 minutes

Wow the salmon panini concept…have never had it, looks so interesting!

Did you need to buy a certain quality/grade of salmon? Often I’ve heard it’s dangerous to just buy what they have over the counter if using raw. I’ll try your salt and sugar method, would love to have raw salmon more often!
