here is a croissant recipe
Ingredients:
4 cups (500g) all-purpose flour
1/2 cup (120ml) warm milk
1/2 cup (120ml) warm water
1/4 cup (50g) sugar
2 tsp (10g) salt
1 tbsp (9g) active dry yeast
3 tbsp (45g) unsalted butter, softened
Butter block:
1 1/4 cups (285g) unsalted butter, cold but pliable
Egg wash:
1 egg
1 tbsp milk
Instructions:
In a small bowl, combine warm milk, water, sugar, and yeast. Let it sit for 5–10 minutes until it becomes foamy. In a large bowl or stand mixer, mix flour and salt. Add the foamy yeast mixture and softened butter. Mix until a rough dough forms. Knead for 8–10 minutes until smooth and elastic. Cover the dough and refrigerate for at least 1 hour.
While the dough chills, prepare the butter block. Place the cold butter between two sheets of parchment paper and pound it with a rolling pin into a 6-inch square. Chill it again if needed, but keep it pliable, not rock hard.
Once the dough is chilled, roll it out on a lightly floured surface into a 10-inch square. Place the butter block diagonally in the center, like a diamond. Fold each corner of the dough toward the center, completely enclosing the butter. Seal the seams by pressing gently.
Roll the dough into a 20x10-inch rectangle. Fold it like a letter into thirds: fold one short side toward the center, then the other on top of that. Wrap in plastic wrap and chill for 30 minutes. This is your first "turn."
Repeat the rolling and folding process two more times, chilling the dough for 30 minutes between each turn. After the third fold, chill the dough for at least one hour, or overnight for better flavor.
When ready to shape, roll the dough out into a large rectangle, about 1/4-inch thick and 8–10 inches wide. Trim the edges to straighten them. Cut the dough into long, tall triangles—each base should be about 3–4 inches wide.
Make a small slit in the center of each triangle base. Starting from the base, gently stretch the triangle a bit, then roll it up toward the tip, slightly pulling as you go. Curve the ends inward to form a crescent. Place them tip-side down on a parchment-lined baking sheet.
Loosely cover the croissants with plastic wrap or a clean kitchen towel. Let them proof at room temperature until puffy and jiggly, around 1.5 to 2 hours. They should nearly double in size.
Preheat your oven to 400°F (200°C). Beat the egg and milk together for the egg wash. Lightly brush the tops of the croissants, being careful not to deflate them. Bake for 18–22 minutes or until golden brown and crisp. Rotate the pan halfway through baking for even color.
Let the croissants cool slightly before serving. Enjoy fresh for the best texture, or reheat gently the next day
