I missed this while it was live. I find your approach to watercolors interesting and learned a few new tricks watching this.
I don't know if you got an answer about the PH Martin Bleedproof white or not so please forgive me if you already know any/all of this. To the best of my knowledge PH Martin Bleedproof white is basically a really opaque gouache. It is not suppose to come dried up. It should be kind of a thick paste (like thick gouache). I think the recommendation not to add water is because it will make it less opaque used at that strength.
I use Davinci titanium white gouache (because it's what I have 😆 I'm pretty sure it's not as opaque as the PH martin Bleedproof white but it works for me.) Sometimes, instead of using it it as is, I add a bit of watercolor into it to give it a bit of color. This works with the bleedproof white as well (possibly better). I do this on a separate mixing pallet so any residue won't muddy up my watercolor mixes.
And the white that comes on most watercolor pallets is usually a 'mixing' white and not opaque enough to cover anything &/or bring it back to white. It will work for lightening up a color a bit. I personally don't find it useful for the way I paint.
