As Italian I would say…..now let’s not overdo it with “rules”. As for drinks to drink with pizza, I would not say that there is a "rule". Many prefer beer, because beer with pizza suits very well. But there are many young people who, for example, take a coke with pizza. In the end everyone drinks what they prefer.

There's a pizza in Sicilia - called sfincione. Sicilian pizza is a square pie with a thick crust and Sicilian pizza is finished with tomato sauce, herbs, and a bit of grated cheese.

I am Italian and Roman but: 1) I definitely prefer the Neapolitan pizza to the Roman one 2) I don't eat pizza with my hands but with a fork and knife 3) I often accompany the pizza with white wine and not with beer; I think the only strict rules are 1) never, never, never pizza with pineapple 2) never divide your pizza among more people

Generically there's not only pizza napoletana or romana: pizza napoletana has thick crust and the crust might even been stuffed with ricotta and other things (cornicione ripieno), also there's the thick variant that looks a lot like a focaccia and it's generally square; there's also the "pizza a pala" crunchy and elongated, now there's even "pizza biscottata" very crunchy, but this last one is a new variant.
In Naples there's even pizza fritta.
Yes we italians usually eat pizza with bare hands but if you want to use fork and knife, none woul criticize you.

You can also eat pizza with Metodo Classico wine or Champagne, because the bubbles and the taste match very well with the basic ingredients of pizza

I imagine it being like asking them to cut a hamburger in half.
It's a bit easier for the chef to do it with a proper kitchen knife.
Anyway, when I was a kid growing up in America, we always used knives and forks to eat pizza at pizza hut because it was considered a more upscale place when they first opened.

There's something I would like to point out about roman and neapolitan pizza. They are both thin. The different is that the former is crispy and the other one is soft. 
But, making a soft crust who stand without making holes is not that easy. That's why you can find very often a Neapolitan pizza which is thicker. 
Try a good Neapolitan pizza: the first test is holding a slice from the side without folding. It is supposed, the real one, to fall down. You gotta fold, or take it with two hands. If it doesn't fall, it's because the crust is too thick, and the "pizzaiolo" is not that amazing ;)

I just returned from italy. I had a neopolitana pizza.. it was the name of a pizza. it was a really strong fishy one just anchovies. very delicious

Spiegazione perfetta! I napoletani dicono ai romani "voi mangiate una piadina condita" e i romani rispondono "voi mangiate una focaccia!". A me, da romana, piace un po' più alta, mentre a mio marito, anch'egli romano, ama quella bassa e croccnte, e allora... la faccio in casa, a volte alta, a volte bassa, tanto ai bimbi piace in tutti e due i modi, basta che sia Margherita! Certo che la pizza napoletana, essendo alta, deve essere lievitata parecchie ore, altrimenti ti rimane sullo stomaco e non va giù (infatti, più ore di lievitazione impieghi, meno lievito devi utilizzare), ed è per questo che bisogna fare attenzione all'impasto. A Roma, poi, c'è anche la pinza, ma anche la pizza bianca e rossa del fornaio (ti consiglio di provarla al forno di Campo dei Fiori o, quella rossa, da Beti) e su quella potresti fare un video a parte.
E' vero che di solito le mie amiche straniere (soprattutto le russe), quando le dico che di pizza se ne mangia una a persona, rimangono interdette, ma poi alla fine la mangiano tutta, compresi i fritti iniziali (supplì, crocchè di patate, filetti di baccalà e fiori di zucca) ed è anche divertente vederle alle prese con forchetta e coltello, fino a quando dico loro che il Galateo afferma che la pizza si taglia a spicchi con forchetta e coltello e, poi, si mangia con le mani!
La pizza si accompagna alla birra per un motivo molto semplice: al contrario del vino, è una bevanda neutra: una bionda fredda accompagna un po' tutto, mentre il vino dipende dal condimento; per esempio, una Margherita starebbe egregiamente con un Capri bianco, ma con una capricciosa no; e allora, per evitare una bottiglia di vino per ogni pizza, è meglio una bella birra per tutti!

I am italian and roman but I prefer the neapolitan version of the pizza. I hate having oily hands, so I prefer by far using fork and knife, and personally I begin by the crust leaving the central part with all the condiment for last (dulcis in fundo ...), but this is only my own rule ....

we usually eat pizza with hands but also with a knife and fork. I always eat Neapolitan pizza with a fork, the center is too moist.

Well, my technique is a little like that. But I do cut off the middle of each slice, which makes it a bit easier to subdivide slices (I cut slices into smaller slices to sort of stretch out the experience)... :)

i don't like beer and drink wine with it - if other want it too -(or coke). But beer is 90% alcohol with pizza. I think is something "habitual" because go out to eat pizza & beer is a cheaper option, more in the past when pizza and beer are really cheaper in restaurant, when we have lira (the money before euro) you can go to pizzeria and spent 10 to 15 lire for a pizza, coperto and beer (something beetween 5 to 8 actual euro)
