I prefer my baked beans hearty as well and my approach is pretty close. No rotel or brown sugar (prefer a little syrup or molasses if handy), use green onion, and I add celery. I once used chorizo because it was available and it was pretty good. The rotel mix makes more sense to me there. As always, I enjoyed the post.

The recipe I have used for years is 1Lb bacon, brown sugar, onions, liquid smoke, BBQ sauce touch of cumin and pineapple tidbits. I am going to try your recipe cause I love BBQ beans. 🤗
