If we have API key in the general settings of WordPress, how we could pass that API key to ENV file?

Just wondering:

I assume that you also create a .env file on your production server with the correct variables for that environment, if that's the case what is the reason you can't just do the same with the wp-config.php file and place the wp-config.php on the .gitignore?
