today, I would like to share a simple recipe for moist blueberry-lemon cakes with you. These little cakes are quick and easy to make and have a refreshing lemon flavor with a creamy cream cheese topping. Whether it's for Mother's Day or other occasions, these little cakes are perfect for a small and fine indulgence. Surprise your mother with these delicious treats. Enjoy!
Ingredients:
(makes 12 little cakes)
- 2 eggs
- 150 ml kefir / buttermilk
- 50 g butter, melted & cooled
- 2 tsp vanilla paste/extract
- 150 g sugar
- 250 g all purpose flour
- 2 tsp baking powder
- pinch of salt
- zest of one organic lemon
- 100 g blueberries
- 1 tbsp corn starch
Cream Cheese Frosting:
- 200-250 g cream cheese
- 50 g powder sugar
- 1 tsp vanilla paste/extract
- zest of one organic lemon (optional)
- blueberries for decoration
- lemon for decoration
- fresh mint for decoration
Bake the cakes in 220°C for 15-20 minutes.
