I think it is only ‘character destroying’ if you remove the feature. Leaving the feature in situ but covering it where it may be available in the future, saves the feature. Well done.

I say from my own experience to anyone building a house: take as many photos as you can of the areas that will later be built on (preferably with a scale). Because later you might be looking for a place where you can drill well, e.g. to hang a shelf on the wood and not on the insulation.
Fortunately, you have a lot of good documentation with your videos.

You could always have decorative fireplaces. I live in a 130 year old tenement and both of my fireplaces are just decorative now, but they do look great and add character.

Really enjoy your updates! The soundproofing is a kind idea. My son lives in a purpose built 1930’s block of flats, and can hear upstairs, downstairs, next door and downstairs next door. Nightmare.

I’m disappointed about the fireplaces! I love them; so cozy. And you have options if you don’t want them functional, without covering them up. But ultimately it’s your home - and a very lovely one! Live in it in good health!
