Serves 4-6
Syns per serving - FREE

8 large eggs
1 tbsp Mint sauce (no added sugar)
1 tsp dried chives
1 tsp dried parsley
1 onion
3 frozen spinach nests
100g frozen peas
1 courgette
1/2 jar of roasted pepper in brine

Mix the eggs together with a good tablespoon of mint sauce (with no added sugar) with 1 teaspoon each of dried herbs. Season well and whisk together.
Place a deep non stick frying pan with an ovenproof handle over a medium heat and add the chopped onion, 3 frozen spinach nests and the frozen peas and cook until for 4- 5 minutes, stirring occasionally.
Add in a grated courgette and half a drained jar of roasted peppers, chopped and warm through. Remove from the pan and keep warm.
Clean the pan and return to a low heat. Spray with low calorie cooking spray and add in the eggs. Gently stir to warm through and then add in the vegetables. Leave to gently cook for about 10 -12 minutes or until the sides have set up and it starts to easily come away from the pan at the sides when using a spatula.
Place in a preheated moderate oven fan 180c, 200c or gas mark 6 and cook for 5- 10 minutes or until the frittata fills firm to the touch and slightly golden.
Release the frittata around the sides with a spatula and place a large plate over the top and holding tightly invert the plate and pan to release the frittata. Use another plate to turn it back over to its top side, as per the video.
Slice and serve warm or cold with lots of salad.

My wife’s just as clumsy!!
Traditional frittata is made with chopped cherry tomatoes courgettes, Spinach or parsley goes very well in a good frittata
