What I Eat In a Day as a Vegan: SUPERFOODS Edition! 🤓🤙🏼✨

🌿 GREEN DRANK:
1/2 - 1 cup Coconut Water
1 scoop Amazing Grass Detox & Digest Powder
1/2 tsp Maca Powder (I get mine in bulk on Thrive Market)
1/2 tsp Ashwagandha
1 tbsp Wheatgrass Powder
2 1/2 cup Water
*Blend on high for 30s
🥄 SOAKED OATS:
2/3 - 1 cup Oats
1 tbsp Flax
1/2 tsp Cinnamon
1/2 tsp Vanilla Extract
Hemp Milk (Blend 1 tbsp Hemp Hearts with 1 cup Water, the use a 1:1 Oats to Milk ratio)
Toppings: Fresh or Frozen Berries, Coconut Shreds, Cacao Nibs, Nut Butter
*Mix the Oats, Flax, Cinnamon, Vanilla, and Hemp Milk together, then let sit for 10 min (or overnight). Top as desired.
🍕 MEXICAN INSPIRED PIZZA:
Pizza Crust of choice
Salsa
Black Beans
Roasted Red Peppers
Tomatoes
Pickled Jalapeños
Avocado
Nutritional Yeast
Fresh Basil
🍚 WILD RICE BUDDHA BOWL:
Kale
Sweet Potato, diced (I roasted mine at 375F for 25 minutes)
// For the rice (Serves 2)
1 cup Yellow Onion, diced
8 oz Baby Bella mushrooms, sliced
1 cup dry Green Lentils
2/3 cup dry Wild Rice Blend
4 cups Vegetable Broth (or mix of veggie broth and water)
* Sauté the Onion and Mushrooms in water, then once most of the liquid from the Mushrooms has evaporated, add in the dried Lentils, Wild Rice blend, and Vegetable Stock. Bring to a boil, cover, reduce the heat, and simmer for 40 minutes or until all liquid has dissolved
// For the Dressing (serves 1)
Juice of 1 Lemon
1 tbsp Tahini
1 tbsp+ Water (optional, depending how thick you want it to be)
Salt, to taste (optional)
*Stir all ingredients in a small bowl until well combine.
