You could discuss how it has affected your health/energy levels, what you might eat in a day, and how easy or difficult it was for you to start and stick with the diet. It sounds as though you do intermittent fasting as well. Even if your viewers aren't interested in the diet they probably wouldn't mind getting to know you and your lifestyle a little better.
