I did this with an evil following a couple years ago. Sid ultimate 35 mm 120, around 25 pounds. Same exact drivetrain except for older race face next sl. Abso black chainring. Mag mtsl with galfers. It was great on alpine/ hiking trails. But flow trails. Nope. Forks below pikes are waay too flexy for shredding imo. But for an all day/adventure mountain bike this is perfect. Most people around here are getting e-bikes for all day bikes. I applaud you, sir!!!!

I had an 04’ ASR. I loved that bike put a 120 mm fork on it and it was a blast.

I think 11 speed needs a resurgence. It is good stuff. I loved my advent x, but 1 more gear would have been just about all the upgrade I needed. A local shredder went 11 speed gx with no regrets. 11 speed is a good sweet spot.

I have been riding the crap out of my izzo "uncaged 7" in reality it's all those parts on a black frame. The capability of that bike at 120 / 120 is unreal. Taken it to shuttle zones, it's efficient with long pedals and gravel transfers. I didn't think I'd need it but it's got a dual lockout and I love that on gravel road climbs.

I'm coming from the other direction on travel (Gen2 Supercaliber) and also recently built a 120/115 bike (Fezzari Signal Peak SL) and it's so confidence inspiring on the tech and downhills while still letting me charge up hill anytime I want to.
