Oh wow this makes a lot more sense now. I was only in band for three years, and I remember there was a song that was in 3/4, but that was easy to grasp because it was more like a waltz sounding type song. However I remember there was a song we were supposed to play in 6/8, and I remember my band teacher taught us how to count it. After I quit band, I forgot about different time signatures, but only retained 4/4 and 3/4. This video explained a lot now and I remember how to count those odd time signatures.

So, if I wrote that waltz passage in a faster 3/4, where the quarter note is happening as fast as the 6/8 passage's beat, wouldn't that be perceived in 6/8 anyway? The point of 3/4 was that it feels like "ONE and TWO and THREE and, " right? But I keep hearing a longer phrase, and keep pushing the phrase into fewer measures, so it becomes 2 faster sets of the 3 count: "ONE and Two and Three and ONE and Two and Three and." This is equivalent to the 6/8 feel, so in this kind of situation, doesn't it come down to how easy it is to read for players?

So basically mathematically the same, but the rhythmic emphasis is different. Not that hard to understand.

Easiest way to describe it is; 3/4 is waltz time. 6/8 is faster. There's various and numerous ways of playing them.
 But, thats their basis..

I always thought the 6/8 is two quarter notes divided into two triplets whereas the 3/4 has three quarter notes.

3/4 time is strong-weak-weak, strong-weak-weak. 6/8 time is strong-weak-weak, medium-weak-weak. (Example- “ bibity, bobity, boo.)
