Something that might also work is Mixing both script techniques. By summarizing every scene in every episode mentioning notable lines you want and any atmospheric touches you want as well as characters.

You should start with an episode summary and then write it as a screenplay. This helps you not get a jumbled mess where characters quickly change the subject, ignore what other characters say, or their response not even connecting to the original question. You need to plan just about everything when it comes to writing a script.
