This recipe will blow your mind!! Are you looking for something different to do with your Lion's Mane that is not crab cakes? You have to try this 100% vegan recipe.
It has been about a year since I have done a recipe here on Youtube. This is changing starting with this new series called "This Recipe Reminds Me Of." For each episode, I will pick an image, item, or person to take us down memory lane. You never know where this may go. I have many stories to share and hope to bring others on the show to share their story while we whip up some vegan recipes.
In this episode, we are bringing the Lion's Manes mushroom recipes to the channel by showing you how to make a fire vegan Extra Crispy Cajun Double Lion's Mane Sandwich. The inspiration came from a photo of a stranger at a party in Palm Springs, CA, and me at Ace Hotel. Thank God I dont party like that anymore, but I had some good memories. After getting drunk and partying, we would hit Jack In The Box and get their Big Chicken Sandwich. That is another thing I am glad I dont do anymore. We didn't have much, but we had each other and always knew how to have fun.

Extra Crispy Cajun Double Lion's Mane Mushroom Recipe

Sauteing Lion's Mane Mushroom Ingredients
18 - 10 oz of Lion's Mane Mushroom
Pinch of minced onion
Pinch of minced garlic
Pinch of salt and pepper
Wet Batter
1 cup of spelt flour
2/3 - 1 cup sparkling water
2 Tbsp tapioca (Optional)
1 tsp paprika
1/2 tsp cayenne pepper
Salt & pepper to taste
Dry Batter
1/2 cup of spelt flour
1 cup of panko
2 tsp of minced onions
2 tsp minced garlic
2 tsp cajun seasoning
1 tsp Italian seasoning
Additional Ingredients
Bread
Lettuce
Red onions
Vegan mayo or sauce of choice
Instructions
Clean, pull or cut apart the Lion's Mane mushroom. Use 2 - 2.5 oz of Lion's Mane patty each.
Add Lion's Mane to the cast iron pan and cook on medium for 2-3 minutes on each side as you press the Lion's Mane down with the press or pan. Do not overcook; the goal is to cook some water out as we shape our patties. Sat to the side when done.
Create Wet Batter
Create Dry Batter
Fry or Air Fry Lion's Mane (Fry at 370 Degrees) I love to use grape seed oil.
Build your sandwich with sauce, lettuce, red onion, and Lion's Mane on your bun of choice. (It went off with pretzel buns)
