HOLIDAY STUFFED MUSHROOMS

Ingredients
- 12 large white mushrooms (or cremini mushrooms)
- 2 tbsp olive oil (or melted unsalted butter)
- 1 clove garlic, minced
- 1/2 large onion, chopped
- 4 oz cream cheese, softened
- 4 Mini Beef and Cheddar Sticks, finely chopped
- Salt and pepper, to taste
- ½ tsp smoked paprika
- 2 tbsp fresh rosemary, chopped
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tbsp olive oil (for roasting)

Directions
Preheat the oven to 375°F. Line a baking sheet with parchment paper.
Gently remove the stems from the mushrooms, creating a cavity in each cap. Brush the mushroom caps with a bit of olive oil and place them on the prepared baking sheet. Finely chop the stems for the filling.
In a skillet, heat 2 tbsp olive oil over medium heat. Add the chopped mushroom stems, onions, and garlic, cooking for about 2-3 minutes until softened, then turn off the heat.
Mix in the cream cheese, chopped Country Archer Mini Beef and Cheddar Sticks, salt, pepper, paprika, and fresh rosemary until combined.
Spoon the filling into each mushroom cap, pressing gently to pack it in. Sprinkle more rosemary on top (optional), then bake for 15-20 minutes, or until the tops are golden brown and the mushrooms are tender.
Remove from the oven and let them cool slightly before serving. Garnish with extra sprinkle of paprika if desired. Serve immediately. ENJOY!
