Easy Homemade Apple Cider Vinegar

Homemade apple cider vinegar:
All your apple scraps - peels, cores, seeds, any apples you wont eat (NOT rotten apples). I had a lot of apple scraps at once because I was working with a lot of apples, but you can also save your scraps in the freezer until you get enough to make a batch. This is what I usually do. Add all your scraps to a glass jar, and top with sugar. You MUST add the sugar because the bacteria that makes it vinegar needs to feed on the sugar, and the sugar from the apple scraps alone isnt enough. I use 1/4 cup of sugar for every quart. Add some water, your fermentation weight, and finish covering with water. Cover the top with a coffee filter or kitchen towel and leave it to set somewhere cool and dark - I use my pantry. You need to use a coffee filter or kitchen towel to allow gasses to escape as it ferments, but prevent anything from getting in. Every 2-3 days, take it out and give it a stir. This allows the apples to cyle which ones are on the bottom and top and make sure no sugar settles. It also prevents molding! If any apple pieces arent fully submerged they will mold. Do this for 2 weeks, then strain all the fruit out. Return the liquid without the fruit to the jar and allow to ferment for 2 more weeks.
