Fredericksburg, TX is always a must if you're in Central Texas! Next time you're there - Mamacita's Mexican Restaurant is great. Best tortillas anywhere!
If you can do the inside of the Pacific War Museum - it's excellent.
Also, right outside of Fredericksburg is Enchanted Rock State Natural area. You would love hiking up the pink granite dome but they don't allow dogs.
