ALMOND & CRANBERRY BISCOTTI

Ingredients
- 1 1/4 Cup Flour (Maida)
- 1/4 Cup Castor Sugar
- 1/2 Tsp Baking Soda
- 1/4 Tsp Baking Powder
- 1/4 Cup Butter
- Milk as required
- 1/2 Tsp Vanilla Essence
- 1/4 Cup Almonds
- 1/4 Cup Cranberries
Method
- In a bowl add flour with castor sugar. Mix it.
- Now add butter to it and mix well.
- Mix in baking soda, baking powder & vanilla essence.
- Add Almonds, cranberries & As much milk required to prepare a dough like consistency. (bindable)
- Make a log, wrap it around the cling wrap and freeze for 20 mins.
- Lay parchment sheet with butter on a baking tray.
- Put the log of biscotti dough on it & bake @160’ C for 45 mins. (Or until cooked well)
- Cool it down, slice it and re-bake on each side for 15 mins.
- Enjoy with a cup of coffee.
