What if the mkv. file has more than one audio option? How do we choose from them when converting the file to mp4?

My issue is that whenever I manage to get the audio of the video file in English, there won't be a visual (it will keep telling me I need this "extension" to play it and then not work when I click the thing to get it) and the audio will be in poor quality
