Pairing #wine with Indian cuisine is not often explored. But time and again, we’ve shown just how remarkable this union can be when done right. 

With that spirit, we introduced an indigenous grape variety from Greece—a country with a storied wine history and increasing popularity—and paired it with Uttarakhand's lesser-known traditional delicacies during our previous #chefssignaturepairingseries. A truly never-before-attempted experience that left our guests in awe.

Here’s Agiorgitiko, pronounced ah-your-yee-tee-ko, from Nemea—Greece's largest and most important wine region and the heartland of this variety.

Nicknamed the “Blood of Hercules,” #Agiorgitiko wines are wonderfully versatile, offering an expressive combination of red fruit and sweet spice aromas, along with plummy fruit flavors. Tannins are typically non-aggressive and the acidity is moderate. So, if you like your Merlots, this is a wine you should try.

We paired this classic, savory, and easy-going wine by Cavino Winery with an assortment of dishes: Gehath Reshmi Badi Kofta, Murga ki Shikhar, Butwa, Chainsoo, and Kafuli—each one enhanced by the wine's delicious character.
