hey i got a drum smoker just like yours did you notice a slight metal taste when you cook in it my ribs and chicken taste that way when i cook in it its been sand blasted and cooked in twice would a deflector pan possibly get rid of that taste or is it possible not enough exhaust on mine for air to excape mine has 6 3/4 inch holes drilled around lid for exhaust and help would be welcome

i've never had trouble with a metallic taste and have built several drums. did you season it before the first cook?

Looks like cubed sauced brisket point to me, not true burnt ends. Looks like someone got a little too much Internet and KCBS

Someone needs to go back to bbq school. Never I mean Eeeevvveeerrr! Scrap fat off the brisket burnt ends or brisket at all. What a waste of time!!!!
