Stan's Table: How to Make DREAMY CHERRY PIE WITH VODKA from TWIN PEAKS & ALAN WAKE

Why should you add vodka to your cherry pie? Who killed Laura Palmer? Will Alan Wake 2 ever be released? How to make damn fine coffee? We're answering these questions (or at least some of them) in our special episode dedicated to both Alan Wake and Twin Peaks series. Enjoy!

400 g of all-purpose flour
2 tsp of salt
1 tbsp of sugar
200 g of cold butter
2 tbsp of coconut butter
60 ml of ice-cold water
60 ml of ice-cold vodka
1 kg of cherries
100 g of sugar
zest from 1 lemon
2 tsp of vanilla extract
3 tbsp of cornstarch
For the coffee
28.5 g of good medium-roasted coffee beans
400 g of water
1. Combine in the food processor flour, salt and sugar. Pulse a couple of times.
2. Cut butter into pieces, add to the dry mixture along with a couple tablespoons of coconut butter, shortening or olive oil. Pulse until mixture reminds of bread crumbs. Pour into a cold bowl.
3. Combine water with vodka and start adding to the mixture, a spoon at a time. Mix with a spatula and continue adding water until large crumbs are formed. Why add vodka? Because it combines flour and fat (= butter) together and prevents gluten formation at the same time (thanks to the high alcohol content, woo-hoo!).
4. Turn the dough onto a pre-floured surface, work a little bit and cut into two pieces. Wrap in a plastic wrap and put in the fridge for a couple of hours.
5. Just enough time to make our filling. Combine cherries with the sugar (you can take fresh or frozen ones), add a zest of one lemon, vanilla extract, and some cornstarch. Mix well.
6. Roll out both pieces of dough, working from the center to the edges and turning 90 degrees from time to time. Mind that both of them should be bigger than your form.
7. Put one of the dough circles inside the form using the pin, tuck it inside. If you want to a nice nutty touch to your pie, you can also sprinkle some chopped almonds over the bottom layer.
8. Place the filling inside the form, flat out with the help of a spoon.
9. Cut the second dough circle in ten strips, place them on the top of the pie, making a classical lattice. Wash the top with beaten egg and put in a 350F oven for 35-40 minutes. Turn once or twice while baking, wrap the edges in aluminum foil halfway through if they start to burn. When the pie is ready, set aside for 3-4 hours or leave overnight.
10. For the damn fine coffee, grind medium-roasted beans as big as you can, put in the french-press and pour with boiled water. Wait for 10 minutes to brew and press.
11. Cut a generous piece of the pie, top with vanilla ice-cream and pour a cup of hot coffee. Enjoy!
