TRIPLE CHEESECAKE - Recipe

So the other day I was watching Sorted Food (great channel if you love food and getting involved in discussion or just making recipes) and when they did the triple chocolate cake which I have made years ago too when I first started baking, I thought to myself "Well it doesn't have to be just chocolate, why not three types of cheesecakes??".

That was how the cake began. And my first colour in mind was pink and rose water was something I really started enjoying this year but can't seem to figure out how much is needed in a recipe etc, plus not having really used it at all. From there to go with the theme I figured raspberries would make a great pairing and really make it mouth puckering so it's less heavy and overwhelming with this many layers (I mean, can there really be too much cheesecake though? :P). I came across roasted raspberries as a recipe when I was just researching so decided to do that for the layer.

And of course, we must have some sort of very creamy and fluffy baked cheesecake. I went through a lot of possible options but most were prob so strong that it'd over take the rose water, and the colours didn't match up.

In the end I decided vanilla beans would do it justice not only pairing well for colour and flavour, but also enhance the other two flavours. It was so delicious and just right :)

My only suggestion for this recipe is when I first made it I was gauging the batter amount but forgot the cold set layers have whipped cream that adds lot more volume.

So in this video recipe I have corrected that to double the amount for baked cheesecake, so they have equal thickness, and given the measurement for a wider pan if you want to get the traditional thinner layers look for easier eating and prettier slices. Personally I'd like to get all three flavours in a bite so I think the wider pan should be the go! :D

This looks so good! If I picked three flavors for a layer cake, maybe lavender, lemon, and black tea. Alternatively, maybe orange, almond, and chocolate.
