Traditional Afghan Rice
This is one our my favourite dish. A few years back one of my dear friend from Afghanistan shared this recipe with me.

RECIPE
-Oil 1/2 cup
-Salt 11/2 tsp
-Onion sliced 1
-Garlic chopped 1tbsp
-Lamb 1 Kg
-Water 2.5Ltr

-Sugar 3 Tbsp
-Salt 1tsp
-Garam masala 1tsp
-Green Cardamom powder 1/2 tsp

-Oil 1 Tbsp
-Sugar 2 Tbsp
-Carrots Julienne 1 Cup
-Raisins 1/2 cup

-Rice 800g sells basmati rice
-Salt 1tbsp

***ASSEMBLING***
-Green Cardamom 1 Tsp
-Allspice powder 1tsp
***DIRECTION***
-Heat oil in a pan ass onion and cook until golden brown
-Add the lamb, garlic and salt, cook it until lamb is well brown on all sides
- Add water and cook for 11/2 hours until lamb is tender. Remove lamb from the pan and set aside. reserve the stock.
-Place 3 Tbs sugar in a pan on medium heat, cook it until sugar is caramelized, carefully add 1 cup of reserved stock, 1tsp of green cardamom powder, bring it to boil, remove it from heat and set aside.
-Drain the soaked Prince cook in a large pan of boiling water until almost cooked, drain and set aside
-Heat 1 Tbsp of Oil in a pan, add carrot and 2 tbsp sugar, stir 3-4 mins, add Raisins and cook it for another 1 min, remove it from heat and set aside.
For ASSEMBLING:
-In a pot add boiled rice, spread them and pour over stock mixture
-Add Green cardamom powder and allspice powder. Meanwhile, heat 2-3 Tbsp oil in a separate pan, until smoking. Pour oil over the rice.
- Top with Lamb carrots and Raisins
-Cover the pot with Cloth and lid
-Simmer on low flame for
-Remove it from heat and leave covered for 10 mins
Now dish out rice and top with carrot-raisins
