LEARN HOW TO MAKE A QUICK SUN-DRIED TOMATO PESTO PASTA RECIPE TODAY!

LAY HO MA! Busy days have nothing on you when you have this delicious sun dried tomato pesto on hand and ready to go. Join me in this episode and learn how to make a quick sundried tomato pasta recipe today!

Ingredients:
2-3 pieces garlic
20g fresh basil
315ml sun-dried tomatoes
170g spaghetti
1/3 cup almonds
pinch of oregano
pinch of salt
pinch of crushed pepper flakes
drizzle of olive oil
pepper to taste

Directions:
1. Bring a pot of water to boil for the pasta
2. Peel the garlic and pick the leaves from the basil. Set some basil aside for garnish
3. Add the sun-dried tomatoes, garlic, and basil into the blender
4. Cook the pasta to package instructions. Stir occasionally to keep the pasta from sticking together
5. Heat up a nonstick pan to medium heat. Dry toast the almonds for a few minutes. Add them to the blender
6. When the pasta is done, add about a 1/4 cup of pasta water to the blender. Add the oregano, salt, and crushed pepper flakes. Blend on medium high for about 30 seconds
7. Strain out the pasta and set aside
8. Heat the nonstick pan back on medium heat. Add a drizzle of olive oil
9. Add the pasta and a 1/4 cup of the pesto. Give it a stir and add a splash of water
10. Cook for 1-2min. Turn the heat off and fold in the reserved basil
11. Plate and add some freshly cracked pepper to taste

Lay Ho, Lay Ho Wil! I love how you took sun-dried tomatoes and fresh basil (I thoroughly enjoy fresh basil in anything) and then added almonds to make the paste to go with the pasta. I've never thought of adding almonds to a blender and using that on pasta. I've also never seen it done. It wasn't until last year that I found out about using cashews to make a vegan alfredo sauce. I'm enjoying all of the new things that people like you are teaching me. Thank you for that. The pasta looks delicious. And your spice/seasoning cabinet is so well organized that I think you should look into editing a choir singing every time you open it in your videos. I admire your organization skills sir. And thank you for what looks like a delicious dish that I can make.

Instead of the water you could add fresh organic tomatoes too. Also you can make your own marinated sun-dried tomatoes using the bags of dried sun-dried tomatoes and marinate them yourself a half hour ahead - adding in a little hot water to rehydrate them, a little dry wine or dry vermouth, some EVOO some crushed fresh garlic, oregano or "Italian spices"and salt and pepper and sometimes cayenne pepper. (That is what I do anyway).

Doing it right now with a bit of variation 'cuz my sundried tomatoes are dry so I have added some olive oil and a bit of water. Also used cashews instead of almonds and dried basil 'cuz it is winter here & I have no fresh basil. Thank you. I love your cupboard; and I thought I was organized. It is great to see where everything is and when it needs refilling. Gerry

Thanks you. I have quite a few jars of sun dried tomatoes in my cupboards and I only ever use them to add to pizzas as a topping and always wondered what else I could use them for. Am definitely going to try this.
