Animal based gravy does exist, I just invented it 🥲 thanks to @carnivorecrisps
It is
✔️ GLUTEN FREE
✔️ ANIMAL BASED
✔️ PALEO
✔️ NUT FREE
✔️ REAL

Step 1: the squash
• cut the kabocha squash in half
• spoon out the seeds
• place face down
• cook in a 350 degree oven until a knife can stab through easily (30-35 min)
Step 2: the gravy
• add 1 tbsp of beef tallow to a medium sauce pan and let melt over low heat
• add 1 cup of broth (I used oxtail) & stir
• add 1/2-3/4 cup @carnivorecrisps liver blend flour & stir
• add 1/2 cup cream & stir
• add 1/2-3/4 cup @carnivorecrisps chicken flour & stir
• add a sprinkle (about 1-2tsp) gelatin (I used @furtherfood brand)
• let simmer on low heat and stir occasionally until consistency is thick
NOTE: if thickness is off add a bit more flour or gelatin, play with it, don’t be rigid!
Step 2.5: the beef (not pictured 😅)
• add 1 lb of ground beef to a frying pan and cook thoroughly
Step 3: the combo
• cut a small piece off the bottom of the squash so it will sit flat
• place the squash on a plate
• fill with the ground beef
• drizzle gravy on top
• add apple & fresh grated parmesan
